A daily, no carb breakfast is a great way to start the day!
Low/no carb breakfasts are also perfect for menopausal women as lower oestrogen levels mean less control over how insulin is optimised (oestrogen helps control insulin).
Menopausal women have less sensitivity to insulin and are more at risk of becoming insulin resistant.
Eating too many carbs or sugary foods (even too much fruit) can exacerbate the problem 😱
Try this scrambled greens recipe which is an easy and delicious, high protein breakfast ideal for re-setting leptin and insulin.
Ingredients

3 eggs

1 tsp olive oil
-
Salt and pepper to taste

1/2 tsp. dried basil or oregano or 1 tbsp if using fresh herbs

Pinch of turmeric

1/2 cup finely chopped kale or handful of spinach
Method
1. Beat eggs, salt and pepper, turmeric, and basil or oregano in a small bowl.
2. Heat a frying pan, over medium heat and add the oil and greens, cooking until greens have wilted, about 2-3 minutes
3. Add the eggs to the pan then scramble to your taste!
Add quinoa for a larger weekend brunch 😍
