This healthy Homemade Baked Beans recipe is taken from my new book Eat Right, Balance Hormones which helps you uncover the root cause of hormonal imbalances and shows how you can adjust your diet in order to achieve a better balance.
Ingredients
Serves 2
- 1 tbsp Olive oil
- ½ Red onion, finely chopped
- 2 Cloves garlic, minced
- 1 tsp Dried oregano
- ½ tsp Smoked paprika
- 400g tin Cannellini beans, drained and rinsed
- 250g Passata
- 100ml Water
- 1 tbsp Tomato puree
- 1 tbsp Worcestershire sauce (or soy sauce if vegan)
- 2 tsp Maple syrup
- Salt and pepper
Method
- Heat the olive oil in a saucepan over a medium/low heat and gently fry the onion with a pinch of salt for 4-5 minutes until softened.
- Add the garlic, dried oregano, smoked paprika and beans and cook for a further 2 minutes.
- Now add the passata, water, tomato puree, worcestershire sauce and maple syrup. Stir well and simmer for 15-20 minutes or until thickened to your liking. Season with salt and pepper to taste.
