Paleo Southern ‘Fried’ Chicken

This coating on this chicken is grain-free using ground almonds. You won’t get such a crispy crumb as you would with a bread crumb and also because it’s not deep-fried. But it still produces a lovely golden crust. If you prefer you could replace the ground almonds with some gluten-free breadcrumbs. I like @artisanbreadorganic ⠀ ⠀

Serves 4 ⠀ ⠀

INGREDIENTS ⠀

120g ground almonds⠀

1 egg⠀

8 chicken thighs, bone in, skin on⠀

1 tbsp olive oil⠀

Sea salt and black pepper to taste⠀ ⠀ ⠀

Spice rub ⠀ ⠀

3 tsp of paprika

1 tsp ground cumin⠀

1 tsp sea salt⠀

1 tsp dried thyme @seasonedpioneers

1 tsp dried oregano @seasonedpioneers

1/ 2 tsp onion powder

1/2 tsp of garlic powder @steenbergsltd ⠀ ⠀

METHOD ⠀

1. Preheat the oven to 180C. ⠀ ⠀

2. Mix the ground almonds and ingredients for the spice rub in a bowl. In a shallow, beat the egg. ⠀ ⠀

3. Dip the chicken pieces, one at a time, in the egg, skin side only then coat in the mix of ground almonds and spices and place on the baking tray skin side up. ⠀ ⠀

4. Drizzle the oil over the chicken. ⠀ ⠀

5. Bake on a lined baking sheet for about 40 minutes until golden. ⠀ ⠀
