This wonderful, crunchy Raw Carrot Salad recipe is taken from my new book Eat Right, Balance Hormones which helps you uncover the root cause of hormonal imbalances and shows how you can adjust your diet in order to achieve a better balance.
Carrots contain a type of fibre that binds to used-up oestrogen in the gut, helping to carry it out of the body rather than letting it recirculate. If you would like to understand oestrogen dominance in more depth, I have written about it here.
Ingredients
Serves 2
- 2 Medium free range eggs, room temperature
- 2 Medium carrots
- 1 Avocado
- 10-12cm Piece of cucumber
- Handful Cashews
- 1 tbsp Sunflower seeds
Dressing:
- ½ tsp Grated fresh ginger
- ½ tbsp Tamari GF soy sauce
- Juice of ½ lime
- 1 tbsp Sesame oil
- ½ tsp Sesame seeds
Method
- Begin by preparing the eggs. Bring a small pan of water to the boil then slowly lower in the eggs. Boil for 7 ½ minutes. Meanwhile, fill a jug with cold water and add a few ice cubes. Once the eggs are cooked, immediately plunge them into the iced water and leave for 3 minutes. Peel the eggs.
- To make the salad, first use a vegetable peeler to cut the carrots into ribbons then halve and slice the avocado.
- Cut the cucumber in half lengthwise, use a teaspoon to remove the seeds then slice. Add to a bowl with the carrots, cashews and sunflower seeds.
- Whisk all of the dressing ingredients together until emulsified then pour ¾ over the salad.
- Divide the salad between two bowls and top with ½ avocado each and a boiled egg, sliced in half. Finish with a drizzle of the remaining dressing and an extra sprinkle of sesame seeds.
Carrots contain a specific type of fiber that can bind to excess oestrogen in the digestive tract. This process helps facilitate the excretion of oestrogen, thereby aiding in its detoxification. During perimenopause, hormonal fluctuations can sometimes lead to an imbalance or excess of oestrogen relative to progesterone. By helping to remove excess oestrogen from the body, the fibre in carrots can contribute to maintaining a healthier hormonal balance. Carrots are high in antioxidants, particularly beta-carotene, which is converted into vitamin A in the body. These antioxidants can support liver health – the primary organ responsible for hormone metabolism and detoxification. A healthy liver is crucial for effectively processing and eliminating excess hormones, including oestrogen.
