Almond & Macadamia Nut Milk

This milk is delicious in coffee or used on its own cold or warm for hot chocolate. Instead of wasting the leftover pulp use it to make these chocolatey cookies here.

Nut Milk Ingredients

  • 125g Almonds⠀

  • 65g Macadamia Nuts ⠀

  • Pinch salt ⠀

  • 1 Medjool date (optional) ⠀

Method

1. Place the nuts in separate medium size bowls with the salt and cover with lots of filtered water. Leave to soak overnight.⠀

2. Drain and rinse the nuts and place in a high-speed blender with the date if using. ⠀

3. Add 1 litre filtered water. Blend on high speed for 3 minutes.⠀

4. Strain though a nut milk bag or muslin, squeezing out the last of the liquid to leave a dry pulp.⠀

5. Store in an airtight jar in the fridge for up to 5 days.⠀

6. Use the pulp straight away to make the cookies or store in the fridge for 24 hours.⠀
