Cauliflower Rice

Cauliflower rice is a fantastic alternative to rice that is easy to prepare and can aid in weight loss, reduce inflammation, and protect against certain illnesses.

Ingredients

 Serves 5:

  • 500g Cauliflower, cut into rough florets

  • 1 tsp Olive oil

  • Salt and Pepper

Method

  1.  Tip the cauliflower into a food processor and process it into a rice-like consistency.

  2. Heat the oil in a large saucepan over a medium heat. Add the cauliflower, stir together with the oil and cook for 1 minute.

  3. Turn the heat down a little and add 2 tbsp water to the pan. Cover with a lid and cook for 4-5 minutes, stirring regularly, or until the cauliflower is tender. 

  4. Season with salt and pepper to taste.
