Cheesy Cauliflower Mash

This cheesy mashed cauliflower is a tasty low-carb alternative to traditional mashed potatoes.

Serves 4 - Metabolic Types (Di, I, C, De, T, O, S)

Ingredients

  • 500g cauliflower, cut into small
    florets

  • 2 tbsp nutritional yeast

  • 3–4 tbsp plant-based milk

  • 40g spinach

  • Salt and pepper

Method

  1. Tip the cauliflower into a large saucepan along with 3 tablespoons of water and a pinch of salt. Cover with a lid and steam for 5 minutes or
    until the cauliflower is tender.

  2. Tip the cooked cauliflower into a food processor and add the nutritional yeast. Blend until smooth, adding the milk gradually until the mixture reaches a creamy consistency.

  3. Scoop the mash back into the saucepan and place over a low heat to heat back through, then add the spinach. Stir until wilted then taste
    for seasoning.
