Chinese Cabbage Salad with Edamame and Ginger

Radishes are a bitter food, which help digestion and detoxification. Edamame are a phytoestrogen source, which means they help balance out oestrogen levels.

Serves 1 - Metabolic Types (Di, I, C, De, O, S)

Ingredients

  • Juice of ¼ lime

  • 1 tbsp tamari

  • 50g Chinese cabbage, shredded

  • 50g edamame

  • ½ tsp grated ginger

  • ½ avocado, peeled and sliced

  • 3 radishes, quartered

  • Chilli flakes and sesame seeds
    (optional)

Method

  1. Whisk the lime juice and tamari together, then pour over the cabbage.

  2. Massage the dressing into the leaves, then leave for 5 minutes.

  3. Add the edamame to the cabbage and toss to coat in dressing.

  4. Transfer to a serving plate and top with the avocado and radishes.

  5. Sprinkle over chilli flakes and sesame seeds to garnish, if you like.
