Courgette and Preserved Lemon Salad

Taken from my book ‘Eat Right, Lose Weight’ which helps you discover your metabolic type.

Serves 2- All Metabolic Types (Di, I, C, De, T, O, S)

Ingredients

  • 250g courgettes

  • 2 tsp extra virgin olive oil

  • Juice of ½ lemon

  • 1 tsp preserved lemon skin, finely chopped

  • 2 tsp fresh mint, finely chopped

  • ½ tbsp pumpkin seeds

  • ½ tbsp flaxseeds

  • Salt and pepper

Method

  1. Top and tail the courgettes, then use a vegetable peeler to slice them
    into ribbons. Discard the central seedy part of the courgettes.

  2. Whisk together the olive oil and lemon juice until emulsified, then stir in the preserved lemon, mint, seeds and salt and pepper.

  3. Pour the dressing over the courgettes and toss to combine.
