Easy Hummus

So much nicer than shop-bought and you can play around with this basic recipe by adding a little cumin or using half chickpeas and half cooked butternut squash, carrots or roasted red peppers.

INGREDIENTS

  • 1 tin chickpeas (I like @bionaorganic )

  • 3 tablespoons Tahini (use a really good one like this one from Amazon, Pepperwood Organics)

  • 1 lemon, juice

  • 1 very small crushed garlic clove

  • 3 tablespoons best Extra Virgin Olive Oil @the_governor_evoo

  • 1/2 teaspoon salt

  • To serve - extra virgin olive oil and sweet or spicy paprika

METHOD

  1. Drain the chickpeas but keep half the chickpea water.

  2. Blend all the ingredients, including this chickpea water, together in a food processor to your desired consistency. Add a little water if needed.

  3. Drizzle over olive oil and paprika to serve.
