Easy Hummus
So much nicer than shop-bought and you can play around with this basic recipe by adding a little cumin or using half chickpeas and half cooked butternut squash, carrots or roasted red peppers.
INGREDIENTS
1 tin chickpeas (I like @bionaorganic )
3 tablespoons Tahini (use a really good one like this one from Amazon, Pepperwood Organics)
1 lemon, juice
1 very small crushed garlic clove
3 tablespoons best Extra Virgin Olive Oil @the_governor_evoo
1/2 teaspoon salt
To serve - extra virgin olive oil and sweet or spicy paprika
METHOD
Drain the chickpeas but keep half the chickpea water.
Blend all the ingredients, including this chickpea water, together in a food processor to your desired consistency. Add a little water if needed.
Drizzle over olive oil and paprika to serve.
