Iced Cashew Coffee

This is a creamy iced coffee, perfect for the summer months or a quick pick me up!

Serves 1

Ingredients

  • 1 serving of strongly brewed espresso coffee (about one to one and half cups)

  • 1/4 cup cashews (soaked in water overnight)

  • a small pinch of coarse sea salt

Method

  1. Blend all ingredients for about 45 seconds in a high-powered blender. Start on a lower speed and gradually work your way up, ending with about 15 seconds on a very high speed to ensure smooth and creamy texture. 

  2. Place ice cubes in your glass or cup then pour over the coffee mix and enjoy!
