Mixed root vegetables with Red Miso-Walnut Dressing 

 
 
 

Ingredients

  • 1 kilo mixed root vegetables (carrots, squash, celeriac, parsnips), cut into wedges 

  • 2 red onions, quartered 

  • 2 tablespoon olive oil 

  • Salt and pepper 

For the Miso Dressing 

  • Large handful walnuts, grind half roughly in a pestle and mortar and coarsely chop the rest. 

  • 250ml olive oil 

  • 50g red miso paste

  • 1/2 tsp chilli flakes

  • 3 garlic cloves, crushed 


Directions

  1. Place the vegetables on a large baking sheet and mix with the olive oil, salt and peeper. It should be in one layer so use another sheet if necessary.

  2. Bake at 190C for 40 minutes.

  3. For the dressing heat all the ingredients apart from the walnuts in a pan over a low heat and simmer for 5 minutes. Stir well. Then add the walnuts to warm through.

  4. Serve the dressing over the vegetables.
