Simple Chicken & Veg Tray Bake 

 

This is something I cook for a family supper when working late. I put it in the oven on a timer and come home to a ready-made supper!

Toss the chicken pieces (thighs on the bone or drumsticks) in lemon juice, olive oil, paprika and crushed garlic. Marinade for an hour if possible or overnight. Add some new potatoes or organic salad potatoes and bake at oven 160 degrees for 1 hour. Add the asparagus for the last 10 minutes at 180 degrees. Serve with leafy greens to get your daily dose of folic acid.
