Simple Quinoa Tabbouleh

Serves 4 as a side dish or 2 as a main

Ingredients 

  • 1 cup raw quinoa 

  • 1.5 cups vegetable stock (or more if needed)

  • 1/2 tsp ground cumin 

  • 1 lemon, juiced 

  • 3 tablespoons extra virgin olive oil 

  • Salt and pepper to taste 

  • 1/3 cucumber, finely diced 

  • 2 handfuls coriander, parsley & mint, finely chopped

Method

  1. Rinse and drain the quinoa. Cook the quinoa according to packet instructions or in an Instant Pot on Pressure Cook setting 1 minute. 

  2. While still warm add the cumin, lemon and olive oil, salt and pepper. 

  3. Once cooled add the cucumber and herbs.
