Simple Quinoa Tabbouleh
Serves 4 as a side dish or 2 as a main
Ingredients
1 cup raw quinoa
1.5 cups vegetable stock (or more if needed)
1/2 tsp ground cumin
1 lemon, juiced
3 tablespoons extra virgin olive oil
Salt and pepper to taste
1/3 cucumber, finely diced
2 handfuls coriander, parsley & mint, finely chopped
Method
Rinse and drain the quinoa. Cook the quinoa according to packet instructions or in an Instant Pot on Pressure Cook setting 1 minute.
While still warm add the cumin, lemon and olive oil, salt and pepper.
Once cooled add the cucumber and herbs.
