Stewed Apples with Yoghurt and Almonds

This is a marriage made in heaven for the gut, with the prebiotic fibre in
the apple and the probiotics in the yoghurt.

Serves 3 - Metabolic Types (Di, De, O, S)

Ingredients

  • 3 apples, peeled, cored
    and diced

  • 2 tsp ground cinnamon

  • 150g coconut, almond or
    organic soya yoghurt

  • 1 tbsp toasted flaked almonds

Method

  1. Put the apples into a heavy-based saucepan along with the cinnamon
    and 60ml of water.

  2. Cover with a lid and cook over a low heat, stirring occasionally, for 10 minutes or until the apples have broken down but still have some texture.

  3. Spoon 50g yoghurt into a bowl and top with a third of the stewed apple and a sprinkle of toasted almonds.
