Tigernut Paleo Pancakes

Sunday breakfast

INGREDIENTS

  • 2 large eggs

  • 150ml cup unsweetened nut milk

  • 1 teaspoon pure vanilla extract

  • 150g Tigernut flour

  • 75g Cassava flour

  • 1/4 teaspoon ground cinnamon

  • Pinch of sea salt

  • Coconut oil for cooking

For serving

  • Fresh berries such as blueberries

  • Pecans

  • Optional maple syrup

METHOD

1. Preheat a non stick pan on a medium heat

2. Sift the dry ingredients in a jug then pour into a bowl and mix well

3. Add a little coconut oil to the pan then add about 2 tablespoons of batter per pancake. Cook until browned and crispy at edges then flip over and cook for another minute.

4. Serve with berries and optional drizzle of maple syrup.
