Tigernut Waffles

Tigernut flour is naturally grain-free so particularly useful if you are following an AIP diet or can’t tolerate grains. It’s naturally sweet and I think it has a biscuity flavour so perfect for sweet cooking. I use it in my Berry Crumble recipe.

Makes 2

INGREDIENTS ⠀

  • 2 tbsp coconut oil, melted @green.origins

  • 110g tigernut flour @thetigernutcompany

  • 60g arrowroot flour⠀

  • 1/2 small ripe banana ⠀

  • 1/2 tsp baking powder ⠀

  • 1 tsp ground cinnamon⠀

  • 1 tbsp maple syrup⠀

  • 1 tsp pure vanilla extract⠀

  • 125ml filtered water⠀

METHOD ⠀

  1. Lightly oil a waffle maker (mine is a double with room for two waffles) with 1 tablespoon coconut oil, then heat according to the manufacturer’s directions.⠀

  2. Combine all the ingredients and the remaining 1 tablespoon oil in a food processor or blender. Process until combined. While running the food processor, slowly pour in up to 125ml water through the feed tube until the mixture forms the consistency of thick batter.⠀

  3. Pour half the batter onto each waffle plate. Close and cook until the waffles are done (they should be golden brown).⠀

  4. You can serve with blueberry compote - crush a pack of blueberries (can be frozen) in a pan with 1tsp coconut oil. Simmer until cooked.
