Turkey, Bok Choy and Shiitake Mushroom Sweet and Sour Broth

Turkey is a great source of lean protein, full of amino acids which are the building blocks of our bodies.

Serves 1 - Metabolic Types (Di, I, C, De, T, O, S)

Ingredients

  • 2 tsp coconut oil

  • 150g turkey mince

  • 300ml fresh chicken stock

  • 10ml rice vinegar

  • 1 tbsp tamari

  • 40g shiitake mushrooms, sliced

  • 10g bamboo shoots, sliced

  • ½ small red chilli, deseeded and
    thinly sliced

  • ½ spring onion (sliced)

  • 30g bok choy, sliced

Method

  1. Heat the coconut oil in a large saucepan over a medium heat, then
    add the turkey mince. Cook, stirring frequently, until well browned.

  2. Add the chicken stock, rice vinegar, tamari and shiitake mushrooms,
    then bring to a simmer.

  3. Add bamboo shoots, chilli, spring onion and
    bok choy and cook until the bok choy has wilted. Remove from the
    heat and serve.

  4. Serve with an optional carb portion. Consider sweet potato, new potatoes, butternut squash, wild or basmati rice or quinoa. (For all optional carb weights, please see page 154 of my book).
