Turmeric Chicken
Turmeric is a powerhouse of a spice, with anti-inflammatory and antioxidant properties.
Taken from my book ‘Eat Right, Lose Weight’ which helps you discover your metabolic type.
Serves 2- All Metabolic Types (Di, I, C, De, T, O, S)
Ingredients
50g coconut, almond or organic soya yoghurt
2 tsp ground turmeric
Pinch of salt
150g chicken breast
Method
Mix the yoghurt, turmeric and salt together.
Place chicken breast into
the mixture and leave to marinate in the fridge for at least 3 hours.Remove from the fridge 20 minutes before cooking.
Preheat the oven to 180ºC.Put the chicken breast on a baking traylined with baking paper or foil (this will prevent the turmeric staining
the tray) and roast for 20 minutes or until cooked through.Serve with your choice of side dish and optional carb portion. (For all optional carb weights, please see page 154 of my book.
