Turmeric Chicken

Turmeric is a powerhouse of a spice, with anti-inflammatory and antioxidant properties.

Taken from my book ‘Eat Right, Lose Weight’ which helps you discover your metabolic type.

Serves 2- All Metabolic Types (Di, I, C, De, T, O, S)

Ingredients

  • 50g coconut, almond or organic soya yoghurt

  • 2 tsp ground turmeric

  • Pinch of salt

  • 150g chicken breast

Method

  1. Mix the yoghurt, turmeric and salt together.

  2. Place chicken breast into
    the mixture and leave to marinate in the fridge for at least 3 hours.

  3. Remove from the fridge 20 minutes before cooking.
    Preheat the oven to 180ºC.

  4. Put the chicken breast on a baking traylined with baking paper or foil (this will prevent the turmeric staining
    the tray) and roast for 20 minutes or until cooked through.
