Warm Chia Porridge With Berry Compote & Toasted Coconut

INGREDIENTS⠀

  • 2 tablespoons white chia seeds (or use the standard black ones) @rawvibrantliving

  • 1 to 1.5 cups dairy-free milk - I used Almond & Macadamia (see my website for my homemade nut milks)

  • Optional extras - if using shop-bought milks try adding some cashew nut butter to make it creamier ⠀

  • Also try adding ground cinnamon or vanilla power

For the compote

  • Small handful mixed frozen berries ⠀

For the toasted coconut flakes ⠀

  • 2 tablespoons coconut flakes/chips ⠀

METHOD ⠀

  1. Heat the oven to 180c. Place the coconut flakes in a dish and toast in the oven for 5 minutes. ⠀

  2. Place the chia and milk in a bring and bring to a simmer slowly, mixing to prevent clumps. I use a mini whisk. Then turn down heat to warm through for about 10-15 minutes until the chia expanded and soft. ⠀

  3. Meanwhile place the berries in a small pan and bring to the boil then turn down to simmer and reduce to a compote. ⠀

  4. Serve the chia porridge with the compote, coconut and some almond butter @sun.and.seed

Tip - to increase protein content try mixing in some protein powder.
