Brussels Sprout Slaw

Taken from my book ‘Eat Right, Lose Weight’ which helps you discover your metabolic type.

Serves 3 - Metabolic Types (O, Di, De, S, C)

Ingredients

  • 2 tsp extra virgin olive oil

  • 1 tbsp apple cider vinegar

  • 2 tsp wholegrain mustard

  • Salt

  • 200g Brussels sprouts, finely
    shredded

  • 60g radishes, thinly sliced

  • 120g carrot, grated

  • 40g red onion, finely sliced

  • 2 tbsp pumpkin seeds

Method

  1. Whisk together the olive oil, vinegar, mustard and a pinch of salt until emulsified.

  2. Mix the vegetables and pumpkin seeds, then pour over the dressing. Toss to coat the slaw.

  3. Taste and adjust the seasoning if necessary.
