Brussels Sprout Slaw
Taken from my book ‘Eat Right, Lose Weight’ which helps you discover your metabolic type.
Serves 3 - Metabolic Types (O, Di, De, S, C)
Ingredients
2 tsp extra virgin olive oil
1 tbsp apple cider vinegar
2 tsp wholegrain mustard
Salt
200g Brussels sprouts, finely
shredded60g radishes, thinly sliced
120g carrot, grated
40g red onion, finely sliced
2 tbsp pumpkin seeds
Method
Whisk together the olive oil, vinegar, mustard and a pinch of salt until emulsified.
Mix the vegetables and pumpkin seeds, then pour over the dressing. Toss to coat the slaw.
Taste and adjust the seasoning if necessary.
