Smoked Mackerel Niçoise

Oily fish, such as mackerel and anchovies, is one of the best sources of omega-3 fatty acids, essential for making healthy cell membranes.

Serves 1 - Metabolic Types (Di, I, C, T, O, S)

Ingredients

  • 30g green beans, halved

  • 1 medium egg, room temperature

  • 1 smoked mackerel fillet

  • ½ romaine lettuce, shredded

  • 8 black olives

  • 3 anchovies

  • ¼ small red onion, peeled and chopped

  • 5 basil leaves, torn

  • Juice of ½ a lemon

  • Salt and pepper

Method

  1. Bring a small pan of water to the boil and cook the green beans for 3 minutes. They should be tender but still have bite. Use tongs to remove the beans from the water and drop into a bowl of cold water until you’re ready to serve.

  2. Carefully lower the egg into the water and boil for 7 minutes.

  3. Remove from the heat and transfer the egg into a bowl of iced water. Once cool, peel the egg and cut it into quarters.

  4. Heat a large frying pan and fry the mackerel fillet for 2 minutes on each side to warm through.

  5. Drain the beans. Place the shredded lettuce on a plate, top with the egg and sprinkle over the green beans, olives, anchovies, red onion and basil.

  6. Add the mackerel fillet, a squeeze of lemon juice and season with salt and pepper.
