Cranberry and Orange Sauce
Gluten-free free and vegan. It is the perfect accompaniment to your lunch on the big day – as it just smells and looks so Christmassy!
Makes 6 servings
Ingredients
½ cup water
340g fresh cranberries (about 3 cups), remove the tiny stems
12-15 Medjool dates, pitted and diced (adjust to your taste)
2 oranges (2 juiced)
2 cinnamon sticks
1 teaspoon of whole cloves
Method
Combine the water, cranberries, dates, juice of 2 oranges, cloves and cinnamon sticks. Cover and bring to a boil in a medium saucepan.
Once boiling, reduce to heat and simmer for 25 to 30 minutes. Stir occasionally so as not to let it burn. If you feel that the sauce is becoming too thick, feel free to add a little more water. Continue cooking until the cranberries are broken down.
Remove from the heat once the sauce has your desired consistency - it will be a semi-chunky consistency.
Serve warm or chilled.
