Kale Caesar Salad with Salmon
A lovely creamy dairy-free version.
Dulse is a seaweed. Like all edible seaweed, dulse provides a wealth of fibre and protein, and it's also rich in vitamins, trace minerals, healthy fatty acids, and antioxidants.
Ingredients
50g cashew nuts
Juice of 1 lemon
1 crushed garlic clove
1 tsp Dijon mustard
2 anchovy fillets (optional)
3 tbsp olive oil
1 tsp Dulse
2 tsp toasted pumpkin seeds
Directions
Briefly pulse the nuts in a nutribullet or food processor until l fine. Add the rest of the ingredients and blend for a few seconds.
Massage dressing into kale and rocket leaves.
Add cooked salmon.
Add Dulse and pumpkin seeds.
