Kale Caesar Salad with Salmon

A lovely creamy dairy-free version.

Dulse is a seaweed. Like all edible seaweed, dulse provides a wealth of fibre and protein, and it's also rich in vitamins, trace minerals, healthy fatty acids, and antioxidants.

Ingredients

  • 50g cashew nuts

  • Juice of 1 lemon 

  • 1 crushed garlic clove 

  • 1 tsp Dijon mustard 

  • 2 anchovy fillets (optional)

  • 3 tbsp olive oil 

  • 1 tsp Dulse

  • 2 tsp toasted pumpkin seeds

Directions

  1. Briefly pulse the nuts in a nutribullet or food processor until l fine. Add the rest of the ingredients and blend for a few seconds.

  2. Massage dressing into kale and rocket leaves.

  3. Add cooked salmon.

  4. Add Dulse and pumpkin seeds.
