Paleo Bread

INGREDIENTS⠀

  • 250g ground almonds ⠀

  • 35g ground flaxseeds⠀ (brown would make a darker looking loaf but I only had golden)

  • 1 tablespoon whole flaxseeds

  • ½ teaspoon salt⠀

  • 1 teaspoon bicarbonate of soda ⠀

  • 75g arrowroot ⠀

  • 6 tablespoons coconut oil or ghee⠀

  • 4 eggs⠀

  • 1 teaspoon apple cider vinegar⠀

  • 125ml coconut milk from a tin or kefir⠀

METHOD ⠀

  1. In a large bowl or food processor, mix the ground almonds, ground flaxseeds, whole flaxseeds, salt, bicarbonate of soda and arrowroot. In a saucepan, melt the coconut oil or ghee and let cool for 5 minutes. Whisk melted oil together with the eggs, apple cider vinegar and coconut milk or kefir. ⠀

  2. Gently mix wet and dry ingredients to form a batter.⠀

  3. Pour batter into a loaf pan greased or lined with parchment paper. Sprinkle the top with additional seeds. Bake at 180C until a toothpick inserted into the centre of the bread comes out clean, approximately 25-30 minutes.⠀

  4. Allow to cool on a wire rack, cut into slices and serve or freeze. ⠀
