Roasted Cauliflower’Steaks’ with Tahini & Walnut Sauce
I love cooking cauliflower like this. It’s my lazy way when I can’t be bothered to cut into florets. It’s great if you have the oven on anyway. You can switch the walnuts for pine nuts or even pistachios are great. Tahini is a good non-dairy source of calcium.
INGREDIENTS
1 cauliflower cut it not thick slices
Pinch of sumac
Drizzle olive oil
2 tablespoons tahini
10 toasted walnuts
Zest & juice of 1 lemon
1 tablespoon coconut aminos
2 tablespoons water (more for a thinner consistency)
METHOD
1. Heat oven to 180c
2. Place cauliflower on a lined baking tray and drizzle with olive oil and sprinkle over the sumac. Roast for about 20 minutes.
3. In a mini food processor blend all the other ingredients.
4. Serve the cauliflower warm with the sauce.
