Scrambled Greens

A daily, no carb breakfast is a great way to start the day! 

Low/no carb breakfasts are also perfect for menopausal women as lower oestrogen levels mean less control over how insulin is optimised (oestrogen helps control insulin).⁠

Menopausal women have less sensitivity to insulin and are more at risk of becoming insulin resistant.⁠

Eating too many carbs or sugary foods (even too much fruit) can exacerbate the problem 😱⁠⁠

Try this easy and delicious, high protein breakfast which is ideal for re-setting leptin and insulin.⁠

Ingredients

  • 3 eggs⁠

  • 1 tsp olive oil⁠

  • Salt and pepper to taste⁠

  • 1/2 tsp. dried basil or oregano or 1 tbsp if using fresh herbs⁠

  • Pinch of turmeric⁠

  • 1/2 cup finely chopped kale or handful of spinach⁠

Method

1. Beat eggs, salt and pepper, turmeric, and basil or oregano in a small bowl. ⁠

2. Heat a frying pan, over medium heat and add the oil and greens, cooking until greens have wilted, about 2-3 minutes⁠

3. Add the eggs to the pan then scramble to your⁠

taste!⁠

Add quinoa for a larger weekend brunch 😍⁠
