Tuna Nicoise
Serves 2
INGREDIENTS
SALAD
2 ripe tomatoes, cut into bite-sized chunks
1 Small cucumber, finely sliced
1 red bell pepper, finely sliced
4 olives, chopped
2 hard-boiled eggs, peeled and quartered
handful parsley, chopped
1 whole baby cos lettuce, washed and leaves torn
180 g tuna in olive oil, drained
DRESSING
1 tablespoon red wine vinegar or raw apple cider vinegar
1 teaspoon dijon mustard
60 ml cold-pressed olive oil or avocado oil
1/2 teaspoon maple syrup or raw honey
METHOD
Mix dressing ingredients.
Mix all the salad ingredients into a bowl.
Pour over the dressing.
