Tuna Nicoise

Serves 2

INGREDIENTS

SALAD

  • 2 ripe tomatoes, cut into bite-sized chunks

  • 1 Small cucumber, finely sliced

  • 1 red bell pepper, finely sliced

  • 4 olives, chopped

  • 2 hard-boiled eggs, peeled and quartered

  • handful parsley, chopped

  • 1 whole baby cos lettuce, washed and leaves torn

  • 180 g tuna in olive oil, drained 

DRESSING

  • 1 tablespoon red wine vinegar or raw apple cider vinegar

  • 1 teaspoon dijon mustard

  • 60 ml cold-pressed olive oil or avocado oil

  • 1/2 teaspoon maple syrup or raw honey

METHOD

  1. Mix dressing ingredients.

  2. Mix all the salad ingredients into a bowl.

  3. Pour over the dressing.
