Baked Brill with Parsley and Lemon 

 

This is a really easy no-fuss way of cooking Whole fish. We often have this on a Sunday night as I can pop it in the oven with some baked sweet potatoes and get on with sorting everything and everyone out for Monday! 

I bought this Brill this morning from The Fresh Fish Company. Vicky always opens it up for me so that I can put some salty butter inside. I bake it between parchment paper at 180 degrees for 30 minutes. Serve as it is with vegetables or with some salsa verde.
