Warm Coriander Chicken & Roasted Cumin Cauliflower Salad with Tahini Dressing


 I’m still having my love affair with Tahini dressings. Anything goes - Tahini & Miso, Tahini and yoghurt...Here I have made a Tahini Lemon dressing - 1 tablespoon Tahini and water, mixed to a paste. Juice of 1 lemon and two tablespoons olive oil and 1 crushed garlic clove. 
I roasted coarsely chopped cauliflower with cumin at 180 degrees for 20 mins. 
I pan fried the chicken with turmeric and ground coriander. Served on leafy green salad, avocado and pomegranate seeds and chopped fresh mint.
Perfect balance of healthy fats, protein and low GI carbs. A great Metabolic Balance Meal.
